Yes! I agree. Glad to read your blog. Thanks! Hadn't heard about the Apothik food truck, will have to investigate sometime. I was just up at the Midtown Global Market in Mpls with my son who's going to college up there - their Banh Mi sandwich was about $3.50. I didn't try it yet - had to try the awesome Hot Indian place.
